Black Bean Quesadillas

These really are delicious, easy and good for you. Really I swear good for you and delicious. You can make 4 large tortillas or about 6 smaller size ones. They are good the next day reheated in the oven the next day and are a great cold lunch snack as well.


Black Bean Quesadillas

  • 1 can of black beans rinsed
  • 1 clove of garlic diced finely
  • 1/2 -1 jalepeno diced finely
  • 1-2 drops liquid smoke (optional)
  • pepper
  • 8 small tortillas
  • 4 cups(or less) of fresh spinach
  • 2 cups grated cheese
  • salsa
  • sour cream
  • guacamole

Pre-heat oven to 375 C.

In a medium bowl add rinsed black beans diced jalepeno and garlic and liquid smoke and mash together until it has an spreadable texture.

Lay out 4 tortillas on a non stick pan, and spread 1/4 of bean mixture on each one. Place in the over for about 5 minutes.

Take tortillas out add a handful of fresh spinach to each (I really try to jam in in there) and a handful of grated cheese. Top with
remaining tortillas and bake until tops are slightly brown and crispy.

Quarter each one and serve with sour cream and salsa.
