This dip was a weekend staple while I lived in Florida. It takes only 2 minutes to prepare and is full of healthy fats and calcium. The quantities are for one to two people but it doubles well. Make sure your avocados are ripe and use full fat cottage cheese (4%) it really makes a difference. Serve with garlic flat bread, Ryvita, rice crackers or tortilla chips.
- 1 ripe avocado
- 1/2 cup of 4% cottage cheese (small curd if possible)
- 1 tbs prepared mustard
- 1-2 tsp dijon mustard
- 1/2 tsp garlic powder (or use garlic salt to taste and omit salt)
- a pinch of cayenne or chili flakes
- salt and pepper to taste
Mash avocado well with a fork , stir in cottage cheese, mustards and garlic salt until combined well. Season with cayenne/chili flakes, salt and pepper and serve immediately.
