Zucchini Chocolate Chip Bread

AJ didn’t think it was possible but yes, just like carrots, zucchini makes delicious cakes too! At the end of every gardening season I usually am gifted with multiple zucchinis as they seem to grow like weeds here. The zucchini doesn’t have a lot of flavour but does have a lot of moisture, so the cake bakes up moist and delicious. You can flavour it with just about anything but I like cinnamon spice punctuated with chocolate chips. The chocolate is just a bonus, but feel free to substitute nuts/carob chips or omit all together. 
Zucchini Chocolate Chip Bread
  • 3 eggs
  • 1 cup vegetable oil
  • 2 tsp pure vanilla essence
  • 2  cups white sugar
  • 2 cups shredded zucchini
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1/2 tsp all spice
  • 1-1/2 cups of chocolate chips
Preheat oven to 350 F

Spray 4 mini-loaf pans or 1 medium and two minis. You can even do muffins but I like served in loaf form.

In a large bowl, beat eggs, oil, vanilla, and sugar. Next mix in zucchini, flour, salt, baking powder, baking soda, and cinnamon. Once it’s combined add the chocolate/nuts.Pour into the prepared (mini) loaf pans.

Bake about 40-60 minutes in the preheated oven, as oven times vary this is the hardest part to judge. A toothpick inserted in the center of a loaf should come out clean and the loaves should be golden brown. 

Trust me, your neighbours will hate you but the house will smell lovely maybe bake some extra for them.
