Apple Crisp for a Few

Damn you Kate, talking about your apple crisp all day! All I want is crisp!  I have some abrosia apples in the fridge being all healthy, not suspecting their impending doom of deliciousness.  This recipe is so easy to veganize, you can alter by adding other fruit such as peaches or blueberries. If you have nuts or seeds they are a great addition to the topping.

Apple Crisp

4-5 medium sized apples peeled, cored and sliced thin

3 cups of organic oats

1/4 cup of butter or margarine or straight up oil

1/2 cup packed brown sugar

3 tsps of cinnamon

1 tsp of all spice

1 tsp of vanilla

I made this in a 8×8 brownie pan, adjust if you need to make for more than 4 people. Also I really like the crisp part of the apple crisp so I tend to make a little more than most people.


Preheat oven to 350.

Wash, peel, core and thinly slice apples and put into prepared brownie pan. Add 1 tsp of the cinnamon to apples and coat evenly.

In a medium sized bowl, melt butter and sugar, add remaining cinnamon and allspice and oats.

Pour oat mixture evenly over the top. Place in oven and bake for about 30 minutes. The top should be browned, and it should be easily pierced with a fork.

Let cool for a few minutes and serve alone or with whipped cream, or ice cream or soy equivalent.
