Spicy Potato Wedges

My take on potato skins. Thin, crunchy potato wedges covered in homemade spice rub, topped with a ludicrous amount of cheese and served with sour cream or homemade garlic sauce. Sinfully delicious, especially accompanying or after a few beer.

BBQ Spice Rub

  • 1/2 teaspoon of each smoked paprika, Italian seasoning, TexMex or cajun seasoning ( if you don’t have either do equal parts cumin and chili powder) and granulated garlic or garlic powder
  • 1 tsp white sugar
  • fresh pepper and salt to taste (I use between 1/2 -1tsp of each)


  • 4 medium potatoes, scrubbed and sliced length wise
  • 2-3 tbsp olive oil
  • 3/4 -1 cup of grated cheese ( I like a mix of mozzarella and cheddar)
  • 9″x13″ baking sheet


Preheat oven to 370.

Prepare the potatoes and arrange on the well oiled baking sheet.

Mix spice rub and thoroughly coat potatoes on pan. Bake for 10-12 minutes, flip, bake another 10 minutes until everything is very brown and crisp.

Add cheese and put back in oven for about 3-4 more minutes to melt the cheese. Remove form oven and serve immediately with your favorite condiments.
