You decide if you want to invite raisins to the party. I like raisins and I would probably add 1/2 -2/3 cup, or maybe currents they are good too. I happened to be fresh out, since this is a favorite cookie around here.
- 1/2 cup butter
- 2/3 cup brown sugar
- 1/3 cup white sugar
- 1 egg
- 1 tsp baking soda
- 1 tsp allspice
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp salt ( if you use unsalted butter add 1 tsp)
- 1 cup oatmeal (heaping)
- 1 cup (half whole wheat half white) flour
Cream softened butter and sugar together with a hand mixer. Beat in egg, vanilla, spices and salt.
Fold in oatmeal, flour and baking soda. If you are planning on adding raisins I like to rehydrate them a little. The way I do it is add the vanilla to the raisin and 1-2 tsp of boiling water and cover with plastic wrap. I let them sit for atleast 10 minutes before you add them to the dough.
Preheat oven to 350. Chill dough in the fridge for about 30 minutes.
Scoop cookies out in walnut sized balls untop prepare cookie sheet. Bake for 8-10 minutes. When you remove the cookies from the oven let them rest on the cookie sheet fro 2-3 minutes before transferring to a wire rack.
