Salad for Dinner

There has been a lack of posts over the last week or so. I am not even sorry to say I was away on vacation in beautiful Cuba. We had a wonderful time, traveled the province of Ciego De Avila and stayed on the Island Cayo Coco. The staff was amazing in every way, the rum and cigars really are as fabulous as people say. Nothing to complain about in one bit but I did not get photos of food or recipes to bring back. A lot of the food culture is meat or seafood based due to their soil is not the best for farming vegetables. Since March is still their winter the fruit was also not in season. Not to say I didn’t eat as they did provide a great variety of everything they had available, I just did not bother to take pictures of salad which is mostly what I ate everyday washed down with crisp beer or sweet rum.

So today we finally got the courage to venture in the not-so-cold-but-feels-freezing-in-comparison-weather and go get groceries. For whatever reason AJ wanted breakfast for dinner which usually includes a fried egg sandwich with cheese and roasted potatoes (and sometimes garlic sauce). I did not really want breakfast, but I didn’t want to cook something that required much more work then I was already putting in so I came up with a salad, yes more salad, after a week full of salads. It’s great of dinner cause it has protein, relatively low in carbs and has got that temperature and texture mix up that make food fun and interesting. It’s not fancy but it hit the spot and you can used left over roasted potatoes if you have them, makes one dinner salad.


Mixed Green Salad with Roasted Potatoes and a Fried Egg

  • a couple of handfuls of washed mixed greens (fresh herbs or green onions are good in the mix too)
  • 2-3 inches of cucumber washed and sliced thin
  • 1/2 cup of roasted potatoes
  • 1 free range egg
  • prepared dressing ( I used Lemon Poppyseed dressing)

Method

Follow the link for the recipe for the roasted potatoes or if you have some form last night reheat them in the oven.

Prepare the greens and  cucumbers. Prepare frying pan and turn heat to medium or medium high.

Dress the greens and arrange cucumber on top in a medium to large salad bowl.

Fry the egg. Once the egg is almost ready, add warm potatoes to the greens. Top the salad with the egg. Enjoy!
