Happy Cinco de Mayo!

Just a quick post to wish you all a Happy Cinco de Mayo! Such a fun holiday to celebrate when you are in the USA, but in Cananda it’s rarely mentioned. Cinco de Mayo is a day to celebrate the Mexican people and culture and “to commemorate the cause of freedom and democracy during the first years of theĀ American Civil War.”(Wikipedia)

If you cannot be in Mexico or in the USA to celebrate the beautiful music, culture and food of Mexico, at least I’ve got some inspiration for you. Why not make some Guacamole or Pico de Gallo to go with your meal tonight?

I also have great recipes for Tex-Mex favorties such as Black Bean Quesadillas and Enchiladas to try.

If you are craving something sweet why not try making a Tres Leche Cake, my version has coconut and rum, it’s super easy to make and delicious and light. Of course, if all else fails, at least have some tequila!
