A.L.T (Avocado, Lettuce & Tomato)

Want a quick, delicious and nutritious lunch?  Want to try vegan but don’t know where to start? How about a bagel sandwich?.. .easy hunh? Avocado is high in good fats(60% is monounsaturated!) and helps you absorb nutrients from your greens. It’s always good to pair these two together and tomato just completes the twist on B.L.T. Now I know this sandwich could not be easier and should not even have to be a recipe but I wanted to show you how to make it even more tasty, if that is ok with you. I also wanted to highlight how easy and not scary vegan eating can be. This will make 4 sandwiches.

What you need:

  • enough bread(vegan-without egg or milk) or bagels for 4 people
  • 1 ripe avocado, pitted, peeled and sliced
  • 1 clove of garlic, peeled and cut in half width-wise
  • 1 medium-large tomato sliced thin
  • thinly sliced red onion
  • hot sauce
  • salt and pepper to taste
Method:

Prepare all the ingredients and have them handy to assemble.
Toast bread, and once you remove it form the toast rub the garlic clove on all cut sides of the bread.
Assemble sandwiches, avocado, onion, lettuce, tomato, hot sauce and salt and pepper. Try not to bite your fingers, they are yummy!
