Spicy-Sweet Corn Saute

I love corn on the cob and in late August you can get the most delicious sweet corn one could ask for. Normally 10-15 minutes on the BBQ, bathed in butter salt and pepper is my favourite way to eat it. Simple and fresh. I had a craving for spicy sweet so I mixed up some ingredients I had on hand and made a tasty side dish. This would also make a great topping for a flat bread. Yum!

Spicy-Sweet Corn Saute

  • 1/2 red onion, diced
  • 3 cobs of corn, de-kerneled
  • 1/2 jalapeño, minced
  • 1 clove of garlic, minced
  • 2 tbs butter
  • salt and pepper to taste
  • chives for garnish


Shuck, unsilk, wash and kernel (de-kernel?) 3 cobs of corn. Prepare onions, jalapeño, garlic.


Heat a saute pan to medium and melt butter in the pan. Add onions and saute for about 3-5 minutes until onions are soft. Add corn kernels, jalapeño, and garlic and cook until corn is aldente about 3-5 more minutes.Season with salt and pepper to your taste. Serve topped with fresh chives as a side dish or pour over BBQ flatbread.
