Ice Cream Cake

It was my friends Birthday a few days ago and as always I was in the cake making mood. I was short on time with working through the week and having a few folks over to celebrate later on Friday so I thought I would make an ice cream cake. Ice cream cake is relatively expensive and not as impressive when you buy one compared to making one yourself.  A homemade version is a super easy way to make someone’s Birthday extra special. As long as you have a spring-form pan you can make an ice cream cake. This is how I usually put together mine. In this instance I used all PC products so their Vanilla Bean and Chocolate Fudge Crackle Ice Cream, their version of Oreos and their old fashion dark chocolate fudge sauce for ice cream. Homemade Ice Cream Cake

  • 2 x 1.5/1.65L of ice cream one vanilla and one chocolate
  • 1 box of sandwich cookies (oreos, fudgeeos, maple cookies whatever you like)
  • 1 jar of fudge sauce for ice cream or follow my recipe above
  • 1 package of your favourite chocolate bar for garnish ( I used Aero balls in this case)
Method
Take the base layer of ice cream out of the freezer and sit at room temperature for about 20-30 minutes to soften.
Line a large spring form pan with plastic wrap. Mine is about 12″ in diameter and about 3-4 inches deep.
With your hands, crumble 1/2 the box of sandwich cookies and evenly distribute along the bottom of the pan.
With a spatula, spoon (or glob) the entire  contents of the base layer of ice cream into the pan. Be careful not to mix the cookie completely in with ice cream. Cover the ice cream to the best of your ability with the contents of the fudge sauce. Again with your hands crumble the remaining cookies. Make sure the plastic wrap doesn’t collaspe unto what you are doing and place the cake in the freezer to set for about 20 minutes while the second flavour of ice cream is taken out to thaw.
Once the top layer of ice cream is soft enough to spread, remove the cake form the freezer and top with the entire second container of ice cream.  Try your best to smooth it out and top with your favorite candy bar. I choose Aero balls but anything you like will do. You could top with more cookies and fudge sauce, of cut up or crumble the candy bar. You will want to cover this cake with plastic wrap and let set over night.
When you are ready to serve heat up the outsides with the palms of your hands and using the plastic wrap remove from the springform, cut and serve immediately. Enjoy!
