Soba Noodles with Baby Bok Choy, Edamame and Chives

Life does not always work out how you want. In fact it tends to play out exactly the opposite of what you bargained for and usually that is a good thing. Life’s ups and downs and (sometimes unwelcome) surprises, shape you. These tiny and occasionally monumental moments change who you are, prepare you for similar or worse times but always make you appreciate the good things even more. Every now and then what you may imagine could be the worst circumstance ever to happen to you, paves the way for the unplanned good bits that you had never imagined.

My life in the last year has been nothing short of chaos, it’s been unruly and impatient, rude at times but beautiful none the less. Within all the craziness, good things still happened to me that were quite unexpected. Last week I was given such a thoughtful gift I wanted to share with you. My friend/co-worker/jam-making-godess Rebecca, knew I was overwhelmed. She showed up at my door with a smile and a lovely care package filled with two types of homemade delicious enchiladas, beer and a lime for the beer. Did I mention the enchiladas were freezer ready, labelled, and completely face-stuffing, button popping good? They totally were all of those things.

Later that week, I also was gifted some homemade vanilla extract from another one of my co-workers, thanks Amanda, and then some beautiful chive blossoms from Andrew which I used in this recipe.

All the love and kindness I felt made me feel like paying it forward. So I made some simple, delicious comfort food (including some peanut butter balls) packed them up and took them to a friend of mine. Pay forward some unexpected good bits to some unsuspecting good people and if the good bits include soba noodles, all the better.

Soba Noodles with Baby Bok Choy, Edamame and Chives

  • 1/2 package soba noodles
  • 1/2 cup frozen organic edamame
  • 2 tsp of soy sauce
  • 1 tbs sesame oil
  • 1 tsp olive oil
  • 1 clove of garlic minced
  • juice from a 1/4 of a lemon
  • 1/4 cup of chives with blossoms for decorating
sauteed bok choy
  • 4-5 baby bok choy, washed and broken into leaves
  • 1 tbs sesame oil
  • 2 tsp soy sauce
  • a pinch of red pepper flakes

Method

Cook soba noodles with edamame according to package directions. While noodles and cooking mince garlic and chives. Set the blossoms, if you have them, aside for garnish.

Drain soba noodles and edamame in a colander. Add to a large bowl and toss with olive and sesame oil, soy sauce, garlic and chives. Let rest while you stir fry the bok choy.

Wash and stem the baby bok choy. Heat sesame oil in a skillet over medium and add the bok choy, chili flakes and stir fry for about 3 minutes.

Dress with soy sauce and place atop of the dressed soba noodles.

Garnish with more chives and chive blossoms.
