Easy Sauteed Kale with Roasted Spaghetti Squash

Sometime you need healthy clean food, nutritious, simple, low carb food. This would be the recipe you are looking for. Makes four large or six small servings.

Kale with Roasted Spaghetti Squash

  • 1 bunch of kale
  • 1 medium onion
  • 3 cloves of garlic
  • 1 tbsp of fresh sage
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 medium spaghetti squash, roasted

Method

If you are unsure on how to cook a spaghetti squash please read my previous post on roasting one here. You will need to have one cooked and ready to go before preparing the kale.

Once the squash is cooked, removed from the oven and cooling start preparing the vegetable for the saute. Dice onions and set aside. Mince garlic and roughly chop sage set apart from onion. Clean kale well and cut into bit sized pieces.

 

In a large saute pan, heat oil over medium. Add onion and cook until the edges start to brown. Add garlic and sage at this point and incorporate. You may need to add a tad more oil but it’s up to your preference. If you are watching you fat intake add a tsp or so of water. Top onions with all the kale. It’s hard to stir but try to toss the kale in the onion mixture. The kale will cook down and as it starts add apple cider vinegar and salt and pepper to taste.

Cook kale  long enough for your liking , I like mine minimally cooked about 3-5 minutes. Once it’s done, toss with spaghetti squash. If you are vegan top with nutritional yeast if you are vegetarian asiago or Parmesan add a nice flavor with minimal fat.
